Eating healthy is always easier when it tastes good – and this salad is simple and amazing! What I like most about it is that is pairs well with almost everything. Chicken, pasta, in a wrap, on it’s own or with spinach and feta, the possibilities are endless for this greek salad. Make a big batch on Sunday and get creative with it throughout the week!
Greek Salad Recipe
Ingredients
- 2 tbsp yogurt
- 1 lemon, juiced
- 2 tomatoes
- 1 cucumber
- 10-15 pitted kalamata olives
- 1 tsp kosher salt
- 1 tsp pepper
- 1 tsp italian seasoning
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Direction –
Mix your yogurt, lemon juice and dry seasonings well in a large bowl. Set to the side.
Take your tomato and core it. Then take a spoon and remove the seeds and insides. Once all cleaned out, dice your tomato. Take and dice your cucumber and onion, and then chop your olives. When done with the veggies and olives, simply add them to your yogurt mixture and mix well.
This can be used immediately, but I find letting it set in the fridge for half an hour or so makes it better. And the longer it’s in, the better the flavors marry. So if you make a batch on Sunday for the week, it’ll only get better each day. Eating healthy will never be the same!
