I know this looks like a take on a BLT, but it’s not. What this sandwich is though, is amazing. It’s an elevated version of avocado toast. Avocado is amazing. Avocado toast is even better. But a bacon avocado and tomato sandwich is a crunchy, savory and tangy dream. The simplicity of the sandwich makes it something you can make anytime, with ingredients you probably have around the house. Lime and avocado makes a great spread for any sandwich. Lime adds a tang and punch that brightens the avocado and compliments the bacon and tomato.
The end result is a creamy spread complimented by the saltiness of the bacon. Your morning routine will never be the same. And if brunch is your thing…this with a side of Bloody Mary’s may make you swear off all other meals. (And yes, Bloody Mary is pluralized correctly.)

- 1 avocado
- 1 tomato
- 4 slices bread
- 2 slices thick cut bacon
- 1 tsp salt
- 1/2 tsp black pepper
- Juice of 1/2 lime
Slice, seed and remove flesh from skin in preferred method. (We skin first for a clean removal.) In a large bowl, mash avocado, salt, black pepper and lime juice. Cover and set bowl in the fridge to chill. Cut bacon strips in half and pan fry to desired doneness. Set on paper towel to drain. Toast bread. Slice tomatoes. To assemble - spread avocado mixture evenly on each piece of toast. Place tomatoes on two slices. Place bacon on the other slices. Put the sandwich together by placing one bacon slice on top of the tomato slice. Serve as is, or flip for tomato on top goodness.
