Say that three times fast!
I love bananas, to the point that I could probably do myself bodily harm from eating too many…if that’s possible. Pancakes, bread, foster, frozen…or just plain peeled. The crazy part is I don’t care much for sweets. So in coming up with a muffin recipe, I wanted the flavors of the ingredients to come through, not just a sweet treat. The end result is a moist treat that warms the soul. To quote NobakeLeni – ‘taste like hugs that squeeze from the inside out’. Yeah…they’re that good!
Bourbon Banana Blueberry Muffins Recipe
Ingredients –
- 3 ripe bananas
- 1 1/2 cup flour
- 1 cup sugar
- 6 tbsp butter
- 1 shot bourbon
- 1 egg
- 1 cup blueberries
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
Directions
Preheat oven to 375.
Melt all butter on medium. Take your baking tin (I like to use the 6 muffin pan for huge ones) and brush the sides of the tin with just enough butter to coat. Set tin aside.
Stir shot of bourbon into butter and simmer on low for 1-2 minutes. Set bourbon butter aside.
In a large bowl, mash 2 of the bananas up. Then add in sugar and egg and mix well. Next add in the bourb
on butter and blueberries. Take your third banana and cut into thin half moons and then throw them in your wet mix.
In a separate bowl combine all your dry ingredients thoroughly. Once mixed, slowly add into the wet mixture.
Once all combined, pour into your buttered pan and bake for 20 minutes.
The mix of non-mashed bananas, bourbon butter and plump blueberries makes for a moist and heart-warming treat!
